HOW TO MAKE CAFE SUA DA
Foreigners, especially people coming from America, Europe like “cafe sua da” very much. When they come to a coffee shop, they often order ‘a glass of Vietnamese coffee with milk’ or ‘cafe sua da’ in Vietnamese. Cafe sua da can be the most famous Vietnamese drink in the world.
Cafe sua da is extremely delicious. The sweet and rich taste of milk along with the bitterish taste of coffee – all of them blending together perfectly – create a fantastic ‘mouth feel’. This is the reason why many people, especially women, have become so enchanted with the method to brew delicious cafe sua da.
If you are interested in the way to make a great cup of Vietnamese coffee at home, follow these instructions.
1.Choose the equipment and ingredients: This is a very important step
1.1 Choose a four -part Vietnamese coffee filter set.
It is better to choose a filter set made of aluminium which makes the best quality coffee.
It’s a good idea to choose a filter with a series of holes punched equally and evenly.
1.2 Choose pure, authentic Vietnamese coffee.

It’s better to grind coffee finely. When the ground coffee is fine, its contact area with hot water becomes greater. Greater contact means more caffeine, more flavor extraction. In other words, fine ground coffee allows the most efficient extraction.
1.3 Condensed milk with sugar
Sweetened condensed milk – Ong Tho brand is a good choice.
Sweetened condensed milk – Phuong Nam brand is another good choice

2. How to make cafe sua da
Pour hot water over the coffee filter and the cup.
2.1 The amount of coffee: Place the ground coffee into the filter about 25g or 2/5 of the filter
Tip: adding a little salt into coffee makes coffee smoother and enhances the flavor.
2.2 Pour hot water over the coffee, then pour 20ml of condensed milk into the cup
2.3 The temperature of the water for brewing coffee
The best temperature of the water for brewing coffee is between 92°c and 98°c. This can be reached by letting your kettle cool for 30 seconds after coming to the boil. Too hot water (100°c) will cause a loss of quality in the taste of the coffee.
2.4 Wetting the grounds – the first water pouring
Pour about 50ml of hot water into the filter in order to make the grounds swell and expand evenly. This is known as ‘a coffee bloom’.
Pure, authentic coffee absorbs much more water than coffee adding additives such as wine, sugar because it is very dry and soaks up a lot of water.
It’s better to wet the grounds evenly from the bottom as well as inside the filter. This will make the water soak into the grounds evenly as well as avoid making the water too cool when reaching the grounds at the bottom.
The time for wetting the grounds is about 30 seconds to 1 minute. Longer time will make the coffee bitter and decrease the flavor. For pure, authentic coffee, it is not necessary to use the press.
2.5 The second water pouring
After wetting the grounds the first time, pour another 50ml of hot water into the filter and wait for the coffee to drip drop by drop.
When being poured with hot water, pure authentic ground coffee will produce a lot of froths because it is dry and absorbs a lot of water. This is an important way to realize pure, authentic coffee.
2.6 The last step
Wait about 5 minutes for coffee to finish dripping.
Hot cafe sua
After about 5 minutes, use a spoon to stir the coffee and condensed milk together. You have a cup of hot cafe sua.

Fill a glass with ice and pour the milk and coffee mixture over the ice. You have a glass of cafe sua da
